Savvylicious Recipe: Chex Mix

Just a little adaption of one of my holiday favorites.

 

Prep Time:  5 mins.          Bake Time:  1 hour        Serves:  24

  • 2 c. Corn Chex
  • 2 c. Rice Chex
  • 2 c. Wheat Chex
  • 2 c. Multi-Bran Chex
  • 2 c. mixed nuts
  • 1 c. pretzels
  • 6 Tbsp. light butter, melted
  • 2 Tbsp. Worcestershire sauce
  • 1 1/2 tsp. seasoning salt
  • 3/4 tsp. garlic powder
  • 1/2 tsp. onion powder

1.  Preheat oven to 250°.  Spray 2 baking sheets with cooking spray.

2.  In large bowl, mix cereal, nuts, and pretzels.

3.  In a small bowl, combine remaining ingredients.  Pour over cereal mix.  Toss to coat.  Spread on baking sheets.

4.  Bake 1 hour, stirring every 15 minutes.

Savvylicious Recipe: Sugar Cookie Frosting

A quick way to make frosting for any sugar cookie.

 

Prep Time:  5 mins.          Bake Time:  None        Serves:  24

  • 1 c. powdered sugar
  • 4 tsp. fat-free milk
  • 2 tsp. light corn syrup
  • 1/8 tsp. almond extract
  • food coloring

1.  In a small bowl, combine sugar and milk.  Mix until smooth.  Add corn syrup and almond extract.

2.  Add food coloring.

3.  Frost your Sugar Cookies.

Savvylicious Recipe: Sugar Cookies

A twist on an old Better Homes & Gardens favorite recipe.

 

Prep Time:  30 mins.          Bake Time:  10 mins.         Serves:  24

  • 2/3 c. shortening
  • 3/34 c. sugar
  • 1 egg
  • 1/2 tsp. vanilla
  • 2 c. flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 4 tsp. milk

1.  Preheat oven to 375º.  Spray 2 baking sheets with cooking spray.

2.  Cream shortening, sugar, egg, and vanilla with a stand-mixer, on low speed.

3.  Slowly add remaining ingredients.  Chill dough for 30 mins.

4.  Roll out dough onto a floured surface and cut cookies with a cookie cutter.  Place cookies 1 inch apart on baking sheets.  Bake 10 minutes.

5.  Remove from oven and cool completely.

6.  Frost sugar cookies with Sugar Cookie Frosting.

Savvylicious Recipe: Turkey Cupcakes

Easy and inexpensive Thanksgiving dessert for kids.

 

Prep Time:  30 mins.          Bake Time:  20 mins.         Serves:  24

  • 1 box of your favorite cake mix
  • 1 can of chocolate frosting
  • candy corn
  • white cookie icing
  • mini chocolate chips

1.  Bake cupcakes according to directions on package.  Cool completely.

2.  Frost with chocolate frosting.  Add feathers (candy corn), eyes (white cookie icing and mini chocolate chips), and a beak (candy corn).

Savvylicious Recipe: Turkey Sausage Pasta Bake

When you just need to throw some ingredients together…

 

Prep Time:  30 mins.          Bake Time:  25 mins.         Serves:  10

  • 1 lb. pasta (I used Piccolini, but you can use pretty much any small pasta you like)
  • 1 lb. smoked turkey sausage
  • 1/2 c. onion, chopped
  • 1 garlic clove, minced
  • 1 c. spaghetti sauce
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • (2) 14.5 oz. cans diced tomatoes, undrained
  • 1 Tbsp. basil
  • 1 c. chopped spinach
  • 1 c. low-fat shredded mozzarella cheese
  • 1/2 c. shredded parmesan cheese

1.  Preheat oven to 350º.  Spray a 4-qt. casserole dish with cooking spray.

2.  Cook pasta according to directions on package.  Drain.

3.  In a large skillet, cook sausage, onion, and garlic on medium-high heat.

4.  Add spaghetti sauce, tomatoes, salt, and pepper.  Bring to a boil.  Reduce heat and simmer for 10 mins.

5.  Combine spinach and basil in a large bowl.  Add cooked pasta.  Mix well.

6.  Layer 1/2 pasta in the bottom of the casserole dish.  Top with 1/2 sausage mixture.  Top with 1/2 mozzarella cheese.

7.  Repeat layers.  Top with parmesan cheese.

8.  Bake for 25 mins.
